
What are mochi doughnuts?
Mochi doughnuts are soft baked dough with a chewy mochi inside!

Ingredients
- one cup of all-purpose flour (130 grams)
- one tablespoon of cornstarch (10 grams)
- 3/4 cup rice flour (87 grams)
- one tablespoon of baking powder (4 grams)
- 1/2 cup of sugar (100 grams)
- 3.5 oz silken tofu
- 1 large egg
- two tablespoons of water
- vegetable oil or corn oil
Glazes
Strawberry glaze: 4 oz white chocolate, 1 drop of pink food coloring (optional), 2 oz fresh strawberries.
Matcha glaze: 4 oz of white chocolate, 1/4 cup heavy cream, 1 tablespoon of matcha powder.
Chocolate glaze: 3/4 cups of powdered sugar, 2 tablespoons of cocoa powder, 3 tablespoons of milk, 3 tablespoons of Nutella.
Recipe on mochi doughnuts!
- In a large bowl, put 1 cup of flour, 1 tablespoon of cornstarch, 3/4 cup of rice flour, 1 tablespoon of baking powder, and 1/2 cup of sugar. Then put the bowl aside after putting the ingredients listed in.
- In a different bowl, press the silken tofu through a mesh sieve, and scrape the bottom of the mesh so all tofu is used.
- Crack one large egg and use 2 tablespoons of water into the tofu mixture, use a whisk to mix.
- Add the egg and tofu mixture into the large bowl you had set aside in the beginning, and use a spatula to combine the mixtures.
- Once the dough starts coming together, use your plastic gloves and start shaping the dough.
- Form the dough into little balls (around 7 grams each), you’ll have around 64 dough balls.
- Cut 8 (5 x 5 inch) square pieces of parchment paper, and begin forming doughnut shapes on top of each paper (use 8 balls for each doughnut!)
- Fill a pot with 2 inches of vegetable or corn oil and heat it to 325-250 Fahrenheit.
- Place the paper and doughnut onto the large slotted spoon, and gently slip it into the hot oil. (Only do two doughnuts at a time!)
- After a minute or two, use the tongs to flip it over then peel off the parchment paper with the same tongs. Once the doughnuts have a golden brown on one side, flip it over for a minute.
- Put the doughnuts on a plate with paper towels, allowing the extra oil to absorb in the paper towels.
